Kathi whipped up this digestion-supporting vinaigrette and it immediately became everyone's go-to salad dressing around here. It's so delicious!
This quick vinaigrette is perfect for dressing Spring bitter greens (try some young dandelion greens* in your mix!).
1/2 c Digestive Tonic
1/2 c Extra Virgin Olive Oil or Avocado Oil
1 tbsp Fennel Seed, adjust to taste
1 tbsp Raw Honey, adjust to taste
Grind the fennel seed in a spice grinder or mortar and pestle. Mix all ingredients in a mason jar, cap the jar, and shake, shake, shake!
Will keep in the refrigerator for up to two weeks.
*always make sure any plants you're using haven't been sprayed with pesticides or herbicides
